I came up with a new meatball recipe and the family scarfed it down last night. What’s even better, the recipe made over 50 meatballs which freeze wonderfully. They can be cooked from frozen, so dinner is simple!
I used a pre-made jarred pasta sauce that is the lowest carb I could find. It’s called Simple Truth Organic 4 Cheese Pasta Sauce made by the Kroger company. You can use your favorite homemade sauce or jarred sauce (carb count will vary).
Easy Italian Meatballs
3 pounds ground beef (80/20)
2 large eggs
1/2 cup heavy cream
1 cup crushed pork rinds
2 cup shredded Parmesan cheese (I didn’t have the powdery grated type, this worked well)
1/2 cup onion, chopped (measured first, then cooked until soft)
3/4 tsp. garlic powder
2 tsp. salt (I used Himalayan pink salt)
1/2 tsp. black pepper
2 tsp. Italian seasoning
1 tsp. dried rosemary
1/8 – 1/4 tsp. ground cumin
Mix all ingredients well and shape into walnut sized balls. I used a 1 1/2 Tbsp. scoop to keep meatball size consistent. I got 54 meatballs. You can cook immediately or place in a single layer on wax or parchment lined cookie sheets and freeze until solid. Store in freezer bags until ready to cook.
To cook a smaller batch, place 16 meatballs in an 8×8 pan and cover with 1 1/2 cups of your favorite sauce (mine was half the jar). You can easily double in a 9×13. Bake at 350 until internal temp is 165. From frozen, about an hour. Sprinkle mozzarella cheese (whole milk, if available) on top, about 10 minutes prior to being done.

94 calories; 7.2g fat; 0.4g carbs; .03g fiber, 6.4g protein. Less than 0.4g net carbs.

We cooked 16 meatballs for three of us. My plate had 5 meatballs, roughly 1/2 cup sauce, and about 1/3 cup shredded whole milk mozzarella cheese. Nutritional info for my plate was: 669 calories; 50g fat; 7.8g carbs; 2.2g fiber; 43.1g protein – 5.6g net carbs.
